Ingredients
1 and ½ cups cherry tomatoes (225 g)
1 cucumber
1 ripe avocado
2 tablespoons chopped red onion (20 g)
2 tablespoons chopped parsley (20 g)
¼ cup feta cheese (37 g)
2 tablespoons olive oil (32 g)
1 tablespoon red wine vinegar (10 ml)
Salt and pepper to taste)
Preparation
Wash the cherry tomatoes, cut them in half and incorporate them in a bowl.
With the cucumber, remove the seeds and cut into small dice.
Extract the pulp from a ripe avocado and slice it to combine with the above ingredients in the bowl.
